This is a tricky one – it isn’t vitamin C (ascorbic acid) itself which causes this smell nor is it indicative that vitamin c has oxidized. It is mostly likely the combination of vitamin c with other lower molecular weight antioxidants (think ferulic acid). Because vitamin c needs to be formulated with other lower molecular weight antioxidants to increase it’s stability – it is largely unavoidable. A small sacrifice for a very potent antioxidant.
